Mom & Dad Fit For Life Detox Soup

Here is a detox soup I like to make and have around for our family.  It’s delicious and I hope that you enjoy it!

Detox Soup Ingredients:

(serves 6-8)

1 tbs olive oil

1 yellow onion

2 carrots chopped

3 stalks celery chopped

1 bell pepper your choice red or green chopped

6 cloves garlic minced (I use more garlic but this is a good starting point)

1 28 ounce can diced tomatoes

4 cups veggie stock

1 1/2 tsp dried oregano

1 tsp dried basil

1/2 tsp thyme

1 tsp Himalayan pink salt

1/2 tsp pepper

3 cups kale chopped

fresh parsley

Directions:

  • Heat olive oil in pot
  • Add carrot, onion, and celery and cook until onions are translucent
  • Add garlic and bell pepper, cook for about a minute
  • Add in tomatoes, veggie stock and spices stir together
  • Bring to a boil and then turn to med-low heat and let simmer for 20-25 minutes
  • Add in kale and cook just until wilted
  • Top with fresh parsley and serve!
