Here is to you meatless Monday! This was so delicious and filling. We went without the noodles also! The whole point of this sauce is nothing processed in it. All fresh all healthy ingredients.
2-3 lbs Roma tomatoes
1 large white onion
Fresh garlic to your preferred taste but we use a lot because it’s so good for you
Olive Oil 2-4 tbs your preference
Fresh basil to your taste as well
Salt and pepper to your taste also
1 large eggplant
Fresh Kale Salad
Slice the eggplant in rounds and place on a towel. Sprinkle both sides with sea salt or kosher salt and let sit on towel to draw moisture out. This takes about 15 minutes. Once you see water puddles on top of the eggplant wiped with a clean napkin or towel both sides of the eggplant. Dice up the eggplant and sauté with light olive oil and pepper. Set aside.
Cook off your pasta if you decide to use pasta also.
Boil water, put tomatoes in boiling water for one minute take out of water let sit for a min. Peel skins off tomatoes and dice up. Add diced tomatoes, onion, garlic and olive oil to pan. Simmer for 10 minutes then add basil and simmer a few more minutes. We leave our mixture chunky but feel free to purée.
Place eggplant on plate and top with spaghetti sauce or if having noodles mix all together. Add your fresh kale salad to the side and eat up!
