Clean Eating Butternut Squash Soup

This is pretty much a wing it soup. I make big batches because I have a huge family to feed. I will give you my recipe and you can alter it however fits your needs. 

Ingredients:

1 medium butternut squash

2 zucchini 

3 stalks celery

3 Carrots

2 red bell peppers

1 medium red onion

12 cloves of garlic (this is my preference but use less if not big on the flavor)

64oz veggie broth (homemade if you have it) or purified water

Green onions and Fresh Lemon for toppings

Dice up all ingredients put in Dutch oven with olive oil. Sautee just enough to meld the flavors together a bit. Pour in broth and bring to a boil. Reduce heat to low-medium and simmer for about 30 minutes tops. You don’t want to kill your veggies lol. Once done serve into bowel and top with green onions and squeez your preferred amount of lemon into it. Salt and pepper to taste!
