Veggie & Wild Rice Soup

This picture doesn’t do the dish justice but I like to post pics of the meals to help go with the dialogue. This was really just another wing it soup that I made in the crockpot. 

Here is my wing it Recipe:

A couple of tbs of olive oil on bottom of crockpot before adding ingredients 

1 large white onion

5 Carrots

4 Stalks Celery 

1 Container of Baby Bella Mushrooms

4-6 cups of veggie broth or any broth you prefer 

6-10 Cloves of garlic

2-3 bay leaves

A sprig or 2 of Fresh Rosemary (to your taste)

A sprig or 2 of Fresh Thyme (again to your taste)

Couple dashes of Corriander

Salt and pepper to taste

Couple cups cooked wild rice

Add all ingredients to crockpot except rice and cook on low 3-4 hours. Once done stir in preferred amount of rice. I like to squeeze fresh lemon into mine and you can also top with green onions! I served it with a fresh salad and homemade balsamic vinaigrette.
