Vegan “Mac n Cheese”

This recipe is credited to the inspiralized book. It was delicious and if you are looking for a vegan way to eat some Mac n Cheese this could do the trick! I did it with veggies today but my kids would love this sauce with noodles I’m sure so I will be do this again. 

Vegan Mac n Cheese:

For the sauce:

1 tbs olive oil

1/2 cup onion diced

3-5 Cloves garlic diced

1 1/2 cups veggie broth

1 cup raw cashews

2 Chipotle Chilies in adobo sauce

2 tbs Braggs Nutritional Yeast

Heat the olive oil then add onion and garlic and cook to just translucent. Salt and pepper the mixture. Add the mixture to blender with remaining ingredients and blend for 1 minute until a creamy Cheese like texture. Set aside.

For the veggies:

2 Zucchini’s 

2 Large Carrots

Spiralize your veggies and add to an olive oiled 9×13 pan. Top with your cheese mixture and coat your veggies well. Cover with foil and bake for 20 minutes. 

Serve up!

If you aren’t a fan of veggies or think this sounds weird lol try making the sauce and add it to macaroni noodles. The sauce is delicious!
